Zuacorta

Zuacorta is a pasteurized milk Manchego cheese with a natty taste, long persistence and tangy finish.

It has a firm pasture, a firm texture and a pleasant thickness.

It is ivory coloured inside and ochre for the rind.

The rind is treated with extra virgin olive oil in order to be protected from mouldy.

The main difference between Ojos del Guadiana and Zuacorta cheese is that Zuacorta is made from pasteurized milk and Ojos del Guadiana is made from raw milk. The remaining processes are similar.
