This cheese is made from sheep and goats milk. This mix of milks creates an enriched taste with distinctive qualities that are getting this cheese more and more popular.

The milk used in this cheese comes from herds that graze extensively and, in the particular case of goats; they are fed in the ending slopes of Toledo Mountains, grazing wild herbs. This involves the production of very sweet milk that gives our cheese a pleasant taste.

We offer this cheese semicured and cured.
