Our Business

The beginning.

The Manchego Shepherds Cooperative 'Ojos del Guadiana' was born in Daimiel in 1998, as the result of a previous Food & Agricultural Research that recommended to promote the manchega ewe extensive breeding and the manufacturing of manchego cheese in the zone.

A number of shepherds that were fed up with the abuse of local milk industries (due to milk rates and milk quality control parameters variances) decided to merge and work together in order to focus on what they did their best, to produce the best milk to achieve the main goal of this business -manufacturing the best manchego cheese.

José Bono while President of Castilla La Mancha, visited our company.
Our sheep graze in the surroundings of 'Las Tablas de Daimiel'

We are very well placed.

• Our sheep graze extensively in the protected surroundings of the Natural Park 'Las Tablas de Daimiel.'

• We are small enough to focus mainly in the manufacturing of artisan manchego cheese, and big enough to fulfil with guarantee our domestic and international demand of cheese.

• We guarantee you the quality of our cheese. In addition of making the manchego cheese, we produce the raw material (milk) we use in manufacturing the cheese. We control the quality of our product from the sheep care and feeding to its final presentation, by always carrying out the Denomination of Origin Regulating Council restricted regulations.

• Only the cheese manufacturing process is artisan. The remaining processes we achieve have the more up to date technology. We are able to satisfy our customers' tastes and needs.
